This is my favorite way to make honey roasted carrots and parsnips. They’re honestly so delicious and really easy to make. Start by peeling the parsnip and carrots. Then trim off the top and the bottom. Then slice them in half. Place them into your saucepan with some water. Then let them boil for about 10 minutes until they soften. Drain them. Then let them steam dry for a few minutes. Then once they’ve steamed dry, you can pop them in your roasting tray. Drizzle with oil. Season with salt. Then roast in the oven at 180° C for about 30 minutes. Take them out and give them a quick flip halfway through. Get some fresh rosemary and thyme. Roughly chop it. Drizzle with honey. Sprinkle over the herbs. Then back in the oven. Take it out after 15 minutes. Once it’s ready, it should look like this. They should be golden brown and nicely caramelized on the bottom like this. That is absolutely banging.
