No this is not a picture of huevos rancheros. Just my breakfast: fried eggs with salsa made with roasted red tomatoes and chile de árbol, medium spicy rather than really spicy.

But now that I’ve got an addictive red salsa under my belt, one of my next goals is to figure out how to make homemade ranchero sauce, the kind that’s used for huevos rancheros.

To me this is a specific kind of sauce, but I only know it when I taste it – I’m not entirely sure what’s in it.

So I’m looking for input here:

What is the best, or most typical, or just your favorite, kind of sauce for huevos rancheros? Is there an “authentic” version?
