  1. Just the smoke tube on these, bout a 40/60 mix of cherry chips and whatever pellet blend I had in the hopper. ~3hrs total. I usually shoot for 2 but it was windy enough to suck all the smoke out and the color wasnt there yet.

    2lbs cheap store brand white cheddar, block of swiss, havarti, gouda and a small brie. $18 gonna taste like hundreds.

    Gonna leave it in the fridge overnight to dry the surface then vacpac and chill for 3-4wks to mellow before eating.
