Ingredients:
250 g dried cannelloni tubes
500 g spinach (fresh or frozen)
1 onion
2 garlic cloves
250 g ricotta
50 g grated Parmesan
400 ml tomato purée (passata)
200 ml cream or crème fraîche
2 tbsp olive oil
Salt, pepper, nutmeg
A bit of mozzarella or extra Parmesan for baking

Instructions
1. Prepare the spinach
Wash fresh spinach (or thaw frozen).
Finely chop onion and garlic, sauté in olive oil.
Add spinach and cook until wilted.
Season with salt, pepper, and nutmeg.
Let it cool slightly.

2. Make the filling
Chop the spinach finely.
Mix it with the ricotta and half of the Parmesan.
Taste and adjust seasoning.

3. Prepare the sauce
Mix the tomato purée with the cream.
