
Hey everyone. First time making ice cream and I used the Cuisinart maker. I went with the NYT recipe and decided to do a peanut butter ice cream for my first time. The consistency is great, it could be a little sweeter, but it mostly has a bad after taste I think from the vanilla. The recipe said to add it in (1/2 tsp) along with 1 cup pb after straining and off the heat. I used Trader Joe’s bourbon vanilla which now feels like a mistake. Anyway hoping for some advice and insight!

Don’t add vanilla? Did you make sure you used 1/2 tsp and not 1/2 tbsp?
I use vanilla in my PB ice cream, so I don’t know if it’s that. Are you sure your dairy products were still okay?
I’ve never made this, but I’m going to guess it’s the bourbon vanilla extract. Try again with plain vanilla extract, or maybe even leave the vanilla extract out. I generally only put vanilla extract in vanilla ice cream.
Not enough sugar. I’d bump it up to 3/4 cup sugar or just add 1/4 cup karo or liquid glucose. Peanut butter has been tricky as hell for me but my issues are usually textural. I never add vanilla to peanut butter ice cream. It doesn’t need it. I find it conflicting.
