


I first do the tostadas, Cuban bread in the pan, low heat, so the egg won’t turn to rubber when I add it. I added an egg wash with romano cheese, saison completa, and mild New Mexico Hatch green chiles covered the pan then low-temp cooked it through. I added some shredded Mexican blend cheese to part because I have a lactose intolerant guest, in this party, too. Last? The bacon slices! I slid it on to a plate, and served.
