








Biggest pig roast to date. Original plan was buried underground with leaves and burlap but rain forced us to build a raised pit from dirt, logs, river rocks for pit wall, alum sheeting for heat retention and rain cover, tailgate of a trailer as grill, etc. Needed a Cat to lift. The rain changed the plans many times. The flare up and need to retain heat further encouraged improvisation. This setup was able to keep temp from 220-260 with separate oven for charcoal. This bbq took a village of ideas and muscle. But this was the best roast pig so far so absolute success even though nothing went to plan.

Interesting that you were considering doing it in a Hangi or Imu style. I’ve been to many Hangi’s as I had a lot of Maroi friends when I was younger, even with experience it can be hit and miss. Most of the time it was fantastic but one was done in soil that was quite close to a major river and it took on a very bad taste from the soil.
They all were done with a broken down pig though rather than as a whole pig. All of them were great parties though as my Maori buddies were great drinking companions lol, crazy fuckers.
