So my Jewel had another sale on Chuck Roast and once again I decided to try my luck finding a good Chuck Eye and Denver. Here is the before and after picture of one of the pieces I bought.

I might have overtrimmed a bit as the piece was not cut exactly right and the back had a lot of non usable fat but I ended up with ~2.5 lbs of usable meat including an amazing Denver and a Chuck Eye steak that were both mouth watering and super soft. At $4.85 per lb after trimming you cant beat this.

I bought the limit I could and now my freezer is full of Denver and Chuck Eyes…

    You got rid of the good parts that fay is perfectly usable if cooked properly thats not a true chuck eye its too far into the chuck you ruined a good roast to each their own

  3. Nice job trimming. I for one would’ve left more of the fat cap on the Denver steak. Charred fat is awesome.
