They have circles on them and they aren't smooth like normal what is wrong with them
1. how do I prevent it from happening again
2.are they safe to eat and use for hot sauce?
3. What is it ?

    Okay have you got any pictures of the plants that grew these peppers and what were they grown in and what did you feed them ? Did you see any sign of bugs or insects during their growing ? How many chilli peppers are affected is it all of them or just a few ?
    I’m assuming that if the peppers still appear to be fresh as in firm flesh and nothing soft or mouldy on the inside of them, then if there’s any discolouration you could always cut them spots out and I think they should fine to eat.
    Working out how to stop again will start by working out what caused it. Looking at the plants they’re from will help by maybe showing some signs of growth that indicate something.
    It would be a bit presumptuous to say now how you could fix it from happening again. But if there’s no pests, no viruses then it may be the environment, check humidity levels and maybe try a foliar spray with some 1/4 strength nutrients and possibly some additional calmag( calcium and magnesium supplement) but saying that’s a proper stab in the dark
