Professional baker turned home baker trying my hand at sourdough at home! I worked as a sourdough baker for several years and left the industry and now trying to do some baking at home. Learning to cook sourdough in a home oven has been a challenge but a fun one! I've made a few loaves now. I tried the classic Tartine recipe and so far these are my best results! I think I'll try increasing the whole wheat flour on my next bake! Also open to whole wheat heavy recipes if anyone wants to share!

    I’m also a professional baker turned home baker. It’s an interesting challenge, changing from a large mixer to mixing by hand… Why’d you leave the industry? I’m planning to join a farmers market again some time next year but taking my time, developing recipes.

    Any chance you have a photo of your bread scored before baking ? I would love to see how light of a touch it takes to get those delicate wheat kernels. I always seem to score too deeply :/ also curious to know which home oven you use if you don’t mind me asking these loafs are beautiful!
