Turkish Pide with Spinach & Paneer Filling:
Ingredients:
For the Dough:
All-purpose flour (Maida) – 300 g
Gluten powder – 8 g
Salt – 8 g
Milk powder – 10 g
Milk – 100 g
Water – 85 g
Sugar – 20 g
Yeast – 7 g
Soft unsalted butter – 25 g
For the Filling:
Spinach – 200 g (washed and chopped)
Paneer – 100 g (grated or crumbled)
Onion – 1 small, finely chopped
Garlic – 2 cloves, finely chopped
Olive oil or any cooking oil – 2–3 tsp
Chili flakes – ½ tsp (adjust to taste)
Oregano – ½ tsp
Salt – to taste
Grated cheese – 30–50 g (for topping)

Instructions:
Step 1: Activate Yeast
Warm the milk and water (should be warm, not hot).
Add sugar and yeast, mix well, and let it bloom for 5 minutes.
Step 2: Make the Dough
In a stand mixer bowl, combine all-purpose flour, gluten powder, salt, and milk powder.
Add the yeast mixture to the dry ingredients.
Attach the dough hook and knead on low speed, gradually increasing speed, for 7–8 minutes until the dough passes the windowpane test.
Add soft butter and knead until incorporated.
Step 3: First Proofing
Transfer the dough to a greased bowl.
Cover with cling wrap and keep in a warm place until it doubles in size (about 1–1.5 hours).
Step 4: Prepare Spinach-Paneer Filling
Heat oil in a pan. Add garlic and sauté for 30 seconds.
Add onions and cook until translucent.
Add chopped spinach and cook until soft.
Add paneer, salt, chili flakes, and oregano. Mix well and cook for 2–3 minutes.
Turn off the heat and let the mixture cool completely.
Step 5: Shape the Pide
Punch the dough to release the air. Transfer to the counter.
Divide into 3 equal parts. Roll each into an oval shape, keeping the edges slightly thick.
Pinch the ends and sides to form a boat-like shape.
Let the shaped dough proof again for 30 minutes.
Step 6: Fill and Bake
Spread the spinach-paneer filling evenly over each dough.
Sprinkle chili flakes and oregano, then top with grated cheese.
Bake in a preheated oven at 180°C (390°F) for 25–30 minutes, or until the edges turn golden and crispy.
Step 7: Serve
Remove from the oven and let it cool slightly.
Serve warm and enjoy your soft, cheesy, vegetarian Turkish Pide!

Hello everyone, welcome to Amu’s Kitchen. In this video, I’ll be showing how to make a very popular dish from Turkey. It’s Turkish pday with a delicious paneer and spinach filling and melted cheese on top. Watch the video till the end so you don’t miss any tips and tricks. Let’s get into the process. The first step is to activate the yeast with milk and water. Here I have taken active dry yeast. If you are taking instant yeast then you can add it directly to the flour. Milk and water should be warm not hot. It’s very important step. Add sugar and yeast to the mixture and mix well. Let it bloom for about 5 minutes. Meanwhile, you can mix all the dry ingredients with allpurpose flour, salt, gluten, and milk powder. Mix well and keep it ready. After 5 minutes, the yeast has bloomed. If it has not bloomed like this, that means your yeast is not active and should not be used further. Now add this mixture to the stand mixer bowl. Then add dry ingredients. Also attach with the dough hook. Initially start kneading on low speed. Then gradually increase the speed. Once the dough comes together then add butter again. Start kneading it. It takes around 7 to 8 minutes. or until the dough passes the window pane test like this. Once the dough passes the window pane test, fold it like this to make a ball. and transfer it to a bowl greased with a little oil. [Music] Cling wrap the bowl and keep it in a warm place until the dough doubles in size. Meanwhile, I’ll show you how to prepare filling for this. In a pan, heat 2 to three teaspoon of oil. Once the oil is hot, add chopped garlic and saute for about 30 seconds. Then add chopped onions and cook until they turn translucent. Next, add the washed and chopped spinach and cook until it becomes soft. It takes around 2 to 3 minutes to become soft. Then add grated paneer and mix well and cook until it combines well. Then add salt, chili flakes and oregano and mix well and cook for few minutes. Turn off the flame and let the mixture cool completely. See how nicely the dough has doubled. Punch the dough gently to release the air inside. This is my favorite step. Then transfer it onto the counter. Now divide it into three equal parts. Roll each portion into an oval shape. Keep the edges slightly thick as shown in the video and pinch the ends to form a board like shape like this. Repeat the same with the remaining dough balls and let them proof again for about 30 minutes. After 30 minutes of proofing, spread the filling evenly over the dough. Then add grated cheese on top and sprinkle, red chili flakes and oregano according to your spice. Then bake for about 25 to 30 minutes at 180° centigrade or until the edges turn golden and crispy.
