Made with fine bulgur, veggies, fresh herbs, and a citrusy pomegranate dressing.

Ingredients:
• 1 cup fine bulgur
• 2 tbsp tomato paste
• 1 small onion (finely diced)
• 3 tbsp olive oil
• Salt, black pepper, cumin, red pepper flakes
• 1 tsp dry mint (or fresh mint) — optional
• Handful of parsley (chopped)
• 2/3 small tomato (diced)
• 2 small cucumber (diced)
• Pickles — optional

For the dressing:
• Juice of 1 lemon
• 1–2 tbsp pomegranate molasses (you can sub with glaze vinegar)

Perfect as a light lunch, side dish, or a vegan bowl.
