200ml warm water. 3g active dry yeast. Mix thoroughly. 40ml olive oil. 250g all-purpose flour. 1 tbsp salt. ½ tbsp sugar. Blend dry ingredients to aerate the flour. Mix with a spatula. The dough should be very wet and sticky. See how it sticks to your hands! Let rise for 1-1.5 hours. 20g shelled sunflower seeds. With wet hands, stretch and fold the dough from 4 sides (like an envelope). Rest for 40 minutes. Repeat folding 2-3 times. Prep the proofing area. Generously flour your work surface. Transfer the dough, keeping the air bubbles intact. Divide the dough into 2 parts. Shape into rolls by folding the dough. Fold parchment paper on the sides to maintain ciabatta shape. Dust generously with flour on top. Cover with a towel and rest for another 30-40 minutes. Preheat your air fryer at maximum temperature. Air fry at 180°C (360°F) for 25 minutes.   3. If this is 'air fryer' cooking then why all that oil ? May as well cook it properly in an oven – or am i missing something on shortened time on an AF to get the same result?

    I'm no expert on Italian cuisine. However, intrusive 'AI on Google' has this to say :-
    –"The oil to flour proportion of 40 ml oil to 250 gm flour is excessive for a typical ciabatta recipe.
    – Ciabatta recipes typically use a much smaller percentage of oil relative to the flour weight.
    – Common proportions found in recipes for 250g of flour are:

    Recommended range:-
    – Approximately 5 ml (1 tbsp) to 25 ml (1 tbsp + 1 tsp) of oil for 250g of flour.
    – Baker's Percentage: Oil content typically falls within 2% to 10% of the flour weight, with some traditional recipes using no added fat at all. 40 ml of oil (roughly 36g) represents about 14-16% of the flour weight (250g), which is on the very high end of, or beyond, the typical range for this type of bread.
    – Using 40 ml of oil for only 250g of flour would likely result in a very rich, soft, and potentially dense dough that behaves more like an enriched bread dough (such as a brioche or a soft roll dough) rather than a classic, airy ciabatta with its characteristic open crumb structure.   6. There is no point in preheating the machine if you then leave it open for 2 mins while you put the bread in the basket. But otherwise looks good. I will try.
