I recently moved to the island of Borneo and discovered a local hot sauce here called Sabacco. My favorite (as your can tell from how much I've used) is the Sweet & Spicy version. Its super hot, similar to Thai chilis (but actually made from a local Borneo chili). And has a tangy fruity flavor that reminds me of the marinade of Al Pastor. Its become my go to gift whenever I'm back in the States. Nine of them are as vinegary as most Louisiana hot sauces.
