I'm thinking of trying his Cuban Style Pork Shoulder with Mojo for Thanksgiving since I'm tired of turkey but there's a step where he wraps it in Aluminum foil and I thought that's a bad idea if you're using an acidic marinade or sauce.

Am I wrong? If I am wrong, could I use a disposable Aluminum roasting pan for this since I don't have a Dutch Oven? (Using a DO is not listed in the recipe but recommended in the comments)

    I always just put it in the crockpot and it turns out fine. Obviously you don’t get the browning, but the simplicity makes up for it. The flavor is great.

    Save the leftovers and make vaca frita.

    I’ve done foil and DO and preferred foil for the easy cleanup.
