
Hello all
I am about to Sousvide some NY Strips and then finish off in the Grill for that kiss of the Dragon (charcoal finish) but I wasn't sure what temp to Sous Vide them on. Was thinking 132- 134F for 2 hours but not sure.
They are about 1.5 or so inches thick.
Any suggestions are much appreciated!

I’m big fan of the 137 gang
If you want to not worry about cooling your steak as much before you sear you can cook to 133
Id do 2-3 hours for either temp
I’m a 135 guy. Not that you have to be. That’s just a sweet spot for me.
I just did one 131 for 3 hours from frozen. Delicious. I have been meaning to try a little higher to give it a go.
130 for 2 hrs, perfect if you plan on grilling to finish
I do as low as 127 or so, especially if I’m gonna finish/sear on a grill— so it stays within that low Medium rare after ——-
129, then sear over coals
I do 129°f for 2.5 hrs and cast iron to finish.
I’m a 136.8 fan. I know, very random but it’s just how I like it. Then blast it with a butane kitchen torch.
Expect the temp to rise 5-10f while searing.
If you want the steak to be 137f-144f then it should be fine.
If you want medium rare, 125f-130f may be a better temp to sous vide at.
