I got this tasty Serrano jamon at Costco that I was told I could enjoy little bit little, but unsure how to proceed without the other side that’s exposed spoiling while continuing to eat a little by little.

Yes you can flip to slice from other side.
Spaniard here, those noel hams are from my hometown. Yeah when you hit the bone you flip it and do the other side.
