The Michelin speculation which always kicks off at this time of year has been lent added frisson by the choice of Dublin as the location for the ceremony to announce the 2026 stars for Britain and Ireland.
There are hopes that on February 9 we may have a three-star restaurant in Ireland for the first time. Chapter One by Mickael Viljanen, Restaurant Patrick Guilbaud, Liath and Dede – all with two stars – are in contention. But the tyre company is fickle and consistent only in its inconsistency, predictable only in its unpredictability.
