I’m making a seitan wellington. basically a seitan roulade with a mushroom and walnut duxelles, swiss cheese, dijon mustard, and caramelized onions, wrapped in puff pastry.
serving it with roasted root veg and a simple salad with balsamic vinaigrette

I’ve got a shepherds pie baking right now- will be dinner tonight but if it comes out well it’s a contender for thanksgiving.

Vegan mac and cheese, maple dijon roasted root veggies and a vegan charcuterie board for snacking.
I’m making peach cobbler/dump cake, green bean casserole, pumpkin pie, potato salad, and I’m going to try and make a lentil stromboli thing. Besides the stromboli, I make the other stuff every year. I’m the only vegan, and everyone loves everything, but mine is usually extra so I have lots left over. It’s a lot, but it ensures that I get a tasty Thanksgiving full of food with leftovers. Two years in a row my family forgot about me and I ended up eating boxed mashed potatoes with water only and raw veggies from a tray they picked up last minute. Both years I starved all day. I no longer rely on them. But that crumble cake looks DIVINE. Might make that, too lmao
Impressive! I thought your roast was a turkeyless roast from Tofurky or similar. The roast looks and probably tastes amazing.
I will be the only vegan, and I think of what others are bringing, only a couple will make sure their dishes are vegan. So to share with everyone and to have enough for me to eat, I’m bringing cornbread dressing (Mississippi Vegan), a Wellington and gravy (RainbowPlantLife, I think, is the one I’ve decided on), kale salad (Oh She Glows’ festive salad), a pumpkin pie, and chocolate cupcakes (Isa’s) to have something else available besides pies. I might also do a relish tray, because I don’t think anyone else is bringing that and I love olives and pickles.
