Made beef and noodles for dinner this week. Chuck roast, egg noodles, onion, easy peasy and (don’t tell my husband) but these taste better than his Meme’s. 😂 entire recipe cost less than $15 and we ate it for 2 days and I froze the rest for next month when I have to work a lot.

    Recipe:
    2 lbs chuck roast
    1 onion
    12 oz egg noddles
    Chicken stock
    Been bouillon

    Cut roast into 2” pieces and sear on either side. Chop onions and add to empty pan and cook until clear. Add 6c broth ( whatever you have ) and the beef back into pot. Cook until roast is easily shredded. Then add noodles and cook until done. Easy peasy.

    I do “southern goulash” w ground beef, diced tomatoes with chiles, and noodles.

  3. Easy to stretch with some vegetables (onion, carrots, potato, turnip, mushrooms) and/or greens (kale, collard, mustard).

    Eat your recipe one day, then change it up by adding new ingredients for the second or third day. Make a box of Jiffy corn bread too!
