My local truck is gate keeping this pineapple hot sauce. I really want to buy something like this from a small business. Anyone selling something like this?

    Idk but those tacos look good you must be in Washington or Cali. Possibly between them in Oregon but doubtful?

    Since it looks like babyfood, my guess it’s just pineapples pureed with hot peppers or extracts.

    A blender, a can of pineapple, and your favorite pepper and you are set. Takes less than 5 minutes

    Consistency looks similar to taqueria green sauce. If I had to guess, without tasting it and just going on looks, it’s probably pineapple, habanero, maybe some onion, simmered for 10 minutes. Then blended with oil and possibly knorr chicken soup base.

    Id bet anything it’s been emulsified with oil. Use more than you’d expect. You can sauté onions pineapple and peppers in damn near a deep fry. Either boil or sauté tomatillos (if you boil, cook til brown and squishy right before they burst). Then blend. You can also slowly drizzle oil in as you blend if you choose to not use as much oil in the cook process and you’ll get that creamy consistency regardless. I make a similar version about once a week

  10. You’re definitely just going to need to experiment. Make very small batches in a food processor with pineapple and habanero and some combinations of onion, salt or Knorr chicken powder (it’s in a ton of really good Mexican sauces as a “secret” ingredient) and mess around with the ratio of everything. It just visually looks like it does not have a lot of habanero or other yellow/orange pepper to me but lighting might effect this. Take one of the things home and keep tasting it and trying to focus on notes you can taste or smell

    One pineapple. Cut the rind off and core.
    3 to 4 Serrano peppers. Cut in half and remove seeds. Try to leave the meat in.

    Puree your pineapple first. Add peppers into the blender till desired spice is achieved.

    Have you asked them where they sourced it from, or for the recipe?

    So if you’re not getting the recipe (which is objectively NOT gatekeeping), ask if you can just… buy the sauce. Maybe she’ll say no, but if not, it helps her directly AND you get the exact sauce.
