


One of my least favorite things about eating healthy is that making healthy food tends to take a lot of time or effort (or both). This is similar to my undergrad days where I would just boil ramen and call it a day. Now that I'm in graduate nursing school, I figure it's time for me to get healthy and live what I teach my patients. My highest weight was 250lbs and I'm down to 229lbs. Not bad, but I'm also only 5'1" so I've got a ways to go. My goal right now is to get to 150lbs. Been working at this since beginning of October, so I like my progress so far! It's a lot easier than I expected but then again, I do have a lot of advantages some people don't have since I work with all kinds of healthcare providers, including dietitian and nutritionist coworkers in addition to my nursing school stuff. I'm happy to share any advice that comes my way if anyone asks!
As for my recipe, you can use whatever soup base you want, this is just my version. Another great idea would be to use bone broth instead for some extra protein and nutrients. Mind you, I did use a generic nutrition website and generic things rather than specific brands or items, so this might be off a bit.
Also, just a heads up, I'm not affiliated or sponsored, but I did specifically use the Healthy Noodles. One pack is 2 servings or 60 calories. Really helpful for people like me who love ramen and miss noodles. This is a nice, quick meal I make for after my long as hell 12 hr shifts before I pass out since it's about 15 minutes (at most) to make.
