I used a wireless thermometer and pulled them off the cooktop at 118f to 120f. I can’t tell if I pulled them off too early or too late and was too busy to monitor the temp once I pulled them off. I fear I got it wrong but I can’t rely on color to tell so asking for help and feedback. NY strip cooked start to finish on propane griddle.

    Steak looks great, but I’m having trouble with the marshmallows in the sweet potato. I’ve never seen marshmallows on the same plate as a strip steak.

    If you’re colorblind, a sous vide might be life changing for you. Might not be everyone’s cup of tea, but it would be very easy for you to get consistent results.
