Olive Bar and Kitchen in Bandra has begun its twenty fifth anniversary celebrations by introducing a renewed culinary programme led by newly appointed Executive Chef Alessandro Piso. The restaurant, long regarded as a mainstay of Mumbai’s dining landscape, has positioned the move as the start of a new chapter while retaining the identity that has shaped its legacy.
“Olive has always been about more than just food, it’s about moments that stay with you long after the last bite,” says AD Singh, Founder of Olive Bar & Kitchen. “Celebrating 25 years is a wonderful milestone, but for us, it is really about staying true to who we are while exploring new ideas. With Chef Alessandro joining us, the kitchen feels full of fresh energy and we have created our most playful and inventive menu yet, honouring our legacy while also embracing exciting new directions.”
Piso, born in Melaka to an Italian father and a Malaysian Indian mother, brings experience from Michelin-starred kitchens across Europe and Asia, including roles in Singapore, Malaysia, and Italy. His approach blends Italian heritage with a contemporary, experimental sensibility. “Rules? We made them for 25 years. Now it’s time to redefine them,” says Chef Alessandro Piso. “My goal is to keep Olive’s soul alive while giving diners something adventurous and unexpected. Food is about stories – where you come from, where you’re going. At Olive, we celebrate every twist and turn in that journey.”
The refreshed menu introduces reworked Mediterranean dishes, from focaccia and cold appetisers to pastas, pizzas, and reinterpretations of mains such as eggplant moussaka, lamb, and Chilean sea bass. Desserts also see newer expressions, including a reimagined tiramisu.
With the update, Olive continues to reinforce its position within the premium dining segment and signals its intent to evolve with changing consumer tastes.
