I've been on the Mediterranean diet for almost six months now, and I'm down almost 35 lbs. Learning to make vegetarian food has been interesting for me, and has certainly helped the process. A quick, warm veggie wrap has become one of my go-to lunches that I make a lot.

Start by warming a whole wheat tortilla in the microwave for ten seconds.

Spread some hummus on the bottom. I typically use about two tablespoons total.

Add some roasted red peppers. I like to roast them myself, but there are plenty of good canned versions.

Saute whatever veggies you have on hand in a bit of olive oil. I used zucchini and corn here. Add a touch of lemon juice and a sprinkle of feta.

Pour everything on the tortilla. Add some sauce if you like…I normally use some harissa or tahini. Fold up like a burrito, and enjoy!
