Accidentally roasted almond flour, what should I do?
I wanted to bake them to make them less oily, but the temp was too high and roasted it. Can I still use it to make macarons or am I cooked?

Toasted almond flour makes the best frangipane

You could try it but may need more liquid to account for drying it out. Maybe make a smaller batch to test and if it doesn’t work make something else with the remaining toasted flour.

my guess is you gonna have to do something else with it now. over cooking it will make even more oil come out. you can try one small batch and see what happens but my guess is you will see oily marks on the mac tops

I’d assume they’d still be yummy if you went ahead, but as other people have said may have some issues with how dry/oily it may turn out. If you really want macarons I’d say go ahead, if you want something to bring to an event or party etc, I’d make something else.

I think almond flours are used in baking financiers! It would give deep roasted flavor!

I love experimentation! Try a small batch & let us know 😁 Maybe you accidentally discovered a new flavor (or they’ll fail miserably, but then you’ll know too – even with failed shells they’d probably still be tasty).

This happened to me once. It did not turn out well. Macarons were oily and weak. Another sad day in my house 😢

Seeing this made me think of kinako which is a soy bean flour that’s been roasted. In Japan they usually use it to roll mochi in. I bet with roasted almond flour it would be amazing.
Not exactly macarons but something interesting to try if you are down
