Who else is going to be standing around in the cold, smoking a turkey on their kettle, drinking a cold one or ten?

To spatchcock or not to spatchcock, that is the question 😂. Hell yeah, the bird will be smokin and I’ll be smokin. A few pumpkin porters and a fat J

I plan to. The first time I was apprehensive of serving a smoked turkey so I made 2, 1 smoked and 1 roasted. Oddly enough, almost everyone went for the smoked bird.

When smoking, I deboned and quartered the bird for best fit on the 22 Webber.

Yessir, smoking a 48 hour wet brine bird, 12-14 lbs, picking her up this evening.

Also going to smoke (8) stand alone turkey legs – really excited for those!

Nope, they requested pork shoulder. Fine with me, I got like 5 other holiday dinners and turkey is overrated. Yes, brine/spatchcock/smoke is the best way to eat turkey. No, I don’t want it for every gathering from now till 2026

  5. Every year but I use the rotisserie on the kettle. So good!

Me! First time ever last year – brined, spatchcocked, and used the Spider Grills Venom fan controller. Came out GREAT!
