    That sure looks like steatosis to me. That’s gonna be tough and chewy.

    You’re gonna get a lot of comments saying it’s steatosis but I’ve personally purchased and processed a reasonable amount of meat and I’ve seen this type of “marbling” in the exact spot you indicated on rib roasts specifically (usually towards the chuck / chuck roast area) many many times where I’m pretty close to certain it’s not steatosis. YMMV

    If it’s hard like a rock, steatosis. If it’s soft/softer than regular meat, idk just a fat pocket

    The only thing I see is the steak with some pieces having a bit more marbling than others. Get those in the grill and enjoy them.
