Ingredients (makes 4 servings):
• 1 lb Italian sausage (bulk or casing removed)
• 1 cup Arborio rice
• 1 small onion, diced
• 2 cloves garlic, minced
• 1/2 cup dry white wine (optional)
• 4 cups chicken broth (or vegetable broth)
• 1/2 cup Parmesan cheese, grated
• 2 tbsp butter
• 1 tbsp olive oil
• 1/2 tsp dried Italian seasoning
• Salt and pepper, to taste
• Fresh parsley, chopped (for garnish)
How to make it yourself:
1️⃣ In a large pan, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into pieces. Set aside.
2️⃣ In the same pan, melt butter and sauté onions until translucent, about 3-4 minutes. Add garlic and cook for another minute.
3️⃣ Stir in Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
4️⃣ Pour in the white wine (if using) and cook until mostly absorbed.
5️⃣ Gradually add warm chicken broth, one ladle at a time, stirring constantly. Wait until most of the liquid is absorbed before adding more broth. Continue this process until the rice is tender and creamy, about 20-25 minutes.
6️⃣ Stir in cooked sausage, Parmesan, and Italian seasoning. Season with salt and pepper to taste.
7️⃣ Garnish with fresh parsley and serve hot. Enjoy!
