
Peanut and chile de arbol salsa, one of my favorites.
I sautéed 1/2 a diced onion and 2 cloves of garlic in a little olive oil for a couple minutes, pushed them to the edge of the skillet then added 5 chile de arbol and 1 guajillo chile(seeded) to the middle of the skillet to toast.
Put that in a small blender with 1/2 cup of water and 1/2 tsp of chicken bouillon.
Blend this till smooth.
In the same skillet, toast 1/2 cup roasted unsalted peanuts and 2T sesame seeds.
Add the peanuts and sesame seeds to the blender and pulse until it’s still has texture, not smooth like peanut butter.
