Got some green tomatoes from a discount supermarket bundle, had no clue what to do with them. The only real recipe I could find was fried green tomatoes, so I decided to give that a healthier spin. They went completely past my expectations, it was actually delicious!

I made 2 portions, for me and my mom, but the 1 portion pictured has approx.:

285g green tomato (60c), 1/2 egg (43c), 30g cornflour (105c), 25g cornflakes (98c) blended, spices I added: smoked paprika, onion, garlic, S&P, oregano, basil, Around 12g of olive oil brushed on top total (99c)

Baked at 200°C for 20mins, flipped + brushed a bit extra olive oil, and another 20mins.

Had it with a greek yogurt sauce with parsley, spring onion, garlic, hot sauce
