Figs on toast are a dreamy easy lunch option, so make sure you try out my version with lots of spiced caramelised onions. I could honestly eat like 10 of these.

Spiced caramelised onions and figs

½ tsp cumin seeds
½ tsp black mustard seeds (optional)
½ tsp fennel seeds (optional)
½ tsp turmeric
1 red onion, thinly sliced
4 cloves garlic, finely sliced
¼ tsp cinnamon
1 tsp apple cider vinegar
1 tsp brown sugar

Method:
Add a large glug of oil to a small frying pan. Add your whole spices and turmeric and allow to sizzle for 30 seconds.

Add the sliced onions and cook on high for 5-8 mins until brown and caramelised. Add the garlic and cinnamon and cook for a further 3 mins

Deglaze the bottom with the apple cider vinegar, then season with salt and sugar.

Top your crunchy toast with soft goats’ cheese, caramelised onions, figs and fresh chillies.

I don’t know if it’s a universal thing, but every time I visit my mom, I come back with a bag of just random stuff. Flattened rice, beetroot, garlic, ginger. But this time, I also got these delicious figs. I was so excited to make some sort of fig goats cheese toast because I just absolutely love goats cheese. So, I caramelized some onions and some spices like fennel, cumin seeds, mustard seeds, and a little bit of turmeric until they’re really crispy caramelized. Add some sugar and vinegar to kind of balance it out. And just spread this over some really crunchy toast and some soft goats cheese with the freshness of the figs. It makes such a perfect quick lunch. Should not forget big season is very very short.
