A Springfield fast food restaurant was put on a risk control plan this past week after repeatedly having issues with a cooler not keeping perishable food items cold enough, according to a Nov. 13 inspection report from the Springfield-Greene County Health Department.

Braum’s Ice Cream, 1401 W. Sunshine St., had shake milk at 48 degrees, chocolate milk at 50 degrees and eggnog at 50 degrees in its under-counter cooler, according to the Nov. 13 report. This was the third instance in a row of items being kept too warm, the report said. The person in charge started the process to defrost the cooler. The restaurant also had a second cooler at unsafe temperatures, which will not be used to store hazardous food items until it is able to maintain a temperature of 41 degrees or less.

The risk control plan is meant to address the cooler’s temperature being at 48 degrees Fahrenheit and the food inside at even higher temperatures. A risk control plan identifies the risk associated with the violation, what needs to happen to keep food safe and how an establishment can accomplish that goal.

Food that is between 41 degrees and 135 degrees is in what the United States Department of Agriculture calls “the danger zone,” meaning bacteria can grow quickly to levels that cause illness.

Issues found during inspections fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross-contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often “than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda,” according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.
