Started on 9/21 and finally finished it today. My first fermented sauce that I let go this long. Same recipe except I didn’t fire roast the garlic. I slow roasted it in some foil this time.

This was an experiment but it turned out really well. The spice is evened out and is very complex. I may try some other recipes for this duration or longer.

The lighter bottle in the front has a lot of vinegar because that’s how my wife likes it. Works since she likes the extra vinegar and it helps eliminate waste by using it to clean all my containers and utensils at the end.
