As you can see by the title of this video, my mom is going to show us how she makes her extra crispy catfish recipe. And I know you heard that crunch all the way from Arkansas to the rest of the world. You’ve been working on this recipe, right, mama? Yeah, for a while. I’ve seen everybody make it with the mustard, so I decided to make it with the mustard. So, I just tweaked it a little bit. Just a tad. Just a tad. Just a tad. So, she’s going to give you guys this recipe. She’s also going to make me a little honey hot catfish situation, too. So, today’s going to be a very, very good video. Go to her channel, Kitchen 68, and you’ll see all of her recipes. But this one on my channel today, man. So, let’s get ready to eat good. All right. What you do first, mama? I just put a little mustard in and I kept it simple with garlic powder, onion powder, salt, and pepper. That’s it. And mostly I diluted the mustard because I really didn’t want that thick mustard in there. So I probably put like about 1/4 tablespoon of mustard with some water and pulled it in. I beat the mustard and water up together. Then I just p it in there like this. Mhm. This what I use right here. Sometime I get this and this right here. I get it from Kroger’s. Let me see it right Right. What’s the name of it? Golden Fry. M. And basically just meal and seasoning there. It’s pretty clean seasoning. Knowing I make my meal up sometime, sometime I don’t. So this right here is a pretty good product right here. What you going to do next? R put that in there like that. Give me about two or three pieces. You keeping these whole, huh? You ain’t cutting them up cuz it fried good with this, you know, with this particular batter. So, this going to come out extra crispy. Yep. Every time. Every single time. And I’m just going to lay it right here. See that? See how it look? Mhm. [Music] And it’s not really a lot of, you know, mustard on it. It look good, don’t it? So, this how your fish will look. Look like it’s cooked already. Fish don’t look cooked. Yeah, it look okay. Look cool. And right now I got the temperature on about 335. And if it drop, turn on 400. Look. See that? Mhm. See how that go? And if you do it the way I told you to do, you going to have a crispy batter every time on this particular wet batter. Just like this. We got two going cuz we don’t want to be sitting up there waiting all day. Is that right? Yep. That’s right. Come on. Look at that. What it’s looking like now. Don’t let it cook about another 5 minutes. See how they look? And this right here, if you do it this way, you don’t go wrong. Mhm. See that? Get another piece of it. See that? All right. Mhm. How long has it been in there? Give them another green and we’re going to take it out. So, it’s ready now. Yep. Just like this. Good. So, what makes this recipe so crispy? Because I use like 1/4 cup of mustard and probably 14 cup of water. and I stir it up to make it a little looser. Just I find out it works better that way. So, it’s the combination of the mustard wet batter and this cornmeal dry batter that you’re using to make it crispy. And like I say, you can make your own meal, too. So, it’s this right here meal. Mhm. There we go. That’s what I’m talking about right there. It’s looking good. It’s looking crispy. How did you even find this recipe? Because people use the mustard. So I just decided to try but I tried it with the heavy mustard but then I tried it with the water and the mustard. So I find out this way it works out. So the water plus the mustard is the ultimate binder to me. I asked my mama. I said, “Mama, I had this one thing I had one time that I saw somebody on TikTok do. They had some hot honey catfish and she said she going to do what? She said she going to make it. So what we got going on right here? That’s the hot honey sauce. What you put in that right there? Honey, hot sauce, brown sugar. That’s it, I think. Honey, hot sauce, brown sugar. Easy peasy. So yeah, I got to get at least one or two of mine in this hot honey sauce right here, you know. Oh yeah, that’s going to be the one right there. Look at that. Shining and stuff. Who taught you how to do that? I did. That look like Tik Tok. Tik Tok. This what I’ve been waiting on right here. Y’all know I like sauce that hot honey catfish. Mhm. Oh yeah, that look good. We got a whole spread right here. Y’all thought mom was just making catfish today. She got the catfish. We got the potato salad. Y’all know in the south you do the catfish with what? The spaghetti, right? That’s how we grew up eating that. Yeah. And potato salad. Yeah. I always like it with potato salad. But you know, she can’t forget that dessert. Peach cobbler. Y’all know about that right there. If y’all don’t, y’all about to learn today. Tart sauce. You made that too, mama. Yep. Everything homemade from scratch. Homemade from what? Scratch. Scratch, baby. And then you can’t forget the cornbread. What uh uh cooking occasion say that we never heard of cuss cuz that’s what he say. That’s what he say. Well, look, this look good, mama. I appreciate you for making this, you know, for us. For us, about to be good. It’s the real southern way, ain’t it? Yep. The way y’all been making it for y’all ever since y’all was a little kid. And you know, a lot of people be want to ask you stuff in the comments. They want to know um how you look so young and beautiful all the time. You got a routine or something? No, I just wake up in the morning. Thanks God that I’m alive. Uh, another thing people say in the comments all the time is about your hair. How you keep your hair so perfect? I go to Felicia in Little Rock every week, every two weeks. Mhm. And last but not least, we got to know, mama, what inspires you to cook every day? For my mom and my uncles, uncle them like to cook. Did he? Yeah. The cook good. Well, my mom, I just used to I wasn’t in the kitchen like that. I used to step back and look at her cooking. She really didn’t want to be in the kitchen. She just like you. Yeah. I don’t like people in the kitchen when I’m cooking, but it’s okay. Mhm. I’ll take one in one, by the way. One of them. And one of them, please. And thank you. And just a little piece of cornbread. Tie it all off in the middle right there. Give me a little Thank you, mama. You going to feed them? Thank you, mama. I appreciate you. He’s supposed to be feeding me. Yeah, y’all know this is the best part of the day right here. The best part. We got the plate going crazy, man. Let’s see. Let me see how you did here, mama. You know, see you still got your touch. Yeah. Got your touch, huh? Mhm. Spaghetti got a little sweetness to it. What’s that about? What’s that about? Brown sugar in it. And got that kiata. My daughter put a little bit in there. So it really add a little flavor to it. I know y’all see that catfish. I know y’all see that cap. Look at that. That sauce is good on there.   3. Adding the water to the mustard is top tier Momma.. When the water in the mustard hits the oil it has an explosive reaction right, causing bubbles, this helps with the crispiness.. ❤
