
This is my 4th year of craving reubens in October and just buying a brisket and curing my own pastrami. Used the Barbecue Bible Old school pastrami recipe. Didn't feel like fussing with a steamer so I smoked for 17hrs to 204 then wrapped and rested for 4hrs in a cooler.
