    yes this is just a type of “quick pickle.” you can also pop them in the microwave for the same effect, since 7 hours really isn’t that quick.

    I love them. Theyre great simple but also with lots of spices and herbs. Fav is pickled with urfa. Have also fermented them and made fermented onion rings. Those are good

    You absolutely don’t need to wait for seven hours. Their flavor and texture will develop over time, but they’re also great after like 20-30 minutes.

    Only trying I would add. If you do end up doing this, add your spices to the water while you bring it to the boil, or even toast them slightly before adding the cold water. It will help to draw more of their aroma out.

    I just do white vinegar a pinch of salt some pepper corns and one oregano leaf. It’s just as good and less steps

    Yes! I haven’t tried them with pepper though. They are delicious!!

    I make them pretty regularly with sort of a similar processes. Pepper corns, mustard seeds, some cumin seeds, garlic clove or two, dried arbol chili or two. I use an equal parts mix of white distilled vinegar or red wine vinegar with water, heat that to just simmering, and pour over the onions and flavorings in jar until it’s full. Then place in fridge once it cools some. Next day, pickled pink onions.

    Make pickled onions? Yes, regularly!

    2 med red onions
    ½ c white vinegar
    1 c white wine vinegar
    1 T sugar
    1 t salt
    ¼ t chili flake
    1 sm bay leaf
    1 clove garlic – thin sliced or minced

    I do apple cider vinegar + white vinegar and do 5 habaneros to 1 onion (with some other ingredients), wait overnight. Very good.

    If you are okay with your POs being pretty sharp, you can literally just do white vinegar.

    my gf uses peppercorns and allspice berries and it’s a goddamn gift from heaven she is.
