Tried smoking turkey for the first time for an early Thanksgiving meal this weekend. I am happy to report that it turned out amazing!

Here’s what I did in a nutshell:
0: defrost turkey. This was a 16lbs frozen turkey and it took 6 days in the fridge to defrost
1: prep turkey by patting it dry and then salt all over
2: maintain ~285f on the grill until thigh gets to 135f (targeting 1.5 hours of smoking, I used cherry). Rotate turkey every 20-30 minutes and spray with apple cider vinegar to maintain moisture.
3: once it hits the 135f, take it off the grill and lather it up with unsalted butter, wrap it well with aluminum foil
4: set oven to 285f, cook til thigh is 175f (breast will be around 165f)
5: take it out of the oven, let it rest for 1 hour while still wrapped
6: unwrap the turkey, baste it with the drippings
7: set oven to 450, crisp up the skin by baking it for 9-10 mins
