500g flour
65g starter
325g water
10g salt

Mix everything, wait 30min, stretch/knead for about 5 min, shape and place in 20-21 degree Celsius area of my house at 8am with an aliquot jar. We were out of the house until 4:30 and the aliquot needed another hour or two rise. Did one coil fold, shape after another hour and into the fridge. Baked this morning at 8am, cut into it at 3pm.

Gorgeous loaf!! Was a successful experiment in what would happen if I just… did almost nothing. My starter was fed the day before and put into the fridge at peak. Also a great experiment!
