I thought I wanted convenience. What I got was constant troubleshooting, ruined smokes because of grill failure, and not getting the flavor I want. I ended up finding the same model I’ve done dozens of briskets on previously.

Taking her for a walk today with some barbacoa and sausages today.

    Do a hot burn to season it first, with a light oil coating. Easy to YouTube this.

    I just told someone else the same thing about pellet smokers, they all break.

    A stick burner is great.I love my Old County Brazos, but I find it a little too small. Can only do 3 or 4 racks of ribs at a time, due to the hot spot.I’d like a bigger smoker.

    Ideally, you want a WSM for butts, roasts, and whole chickens and an offset for ribs and brisket.

    If there is a dark side of smoking, it’s not offsets. It’s the gadgets with the apps and wifi. Light a fire and cook some meat
