    I absolutely love cutting onions. I like to cut into a fresh onion and I bring it directly to my face and give it a good hearty sniff. It is the only moment that my eyes aren’t painfully dry. One of my favorite pain-adjacent sensations.

    You’re getting off easy if you only have to slice them. You could have to dice them.

    Are you kidding? Getting to chop veg with my knife is probably my favorite part of what I do. Even more so when you’re good at it. Often times I’ll set up to do veg and about halfway through I look up and some of my servers are just staring. Lol it’s the little things

    I’d do that 5 days a week for 2 hours a day first out of the gate. Get it out of the way, and move on. Allowed me to ease into the day slowly. (I was about 18 I think..) And it wasn’t punishment, it was typical apprentice duties in the place I worked. First/second year apprentices always got the ‘shit jobs’. My chef often would come around and whisper that when I reach his age I’d beg to be mindless for a while every day! He wasn’t wrong. 30+ years ago and I can still smell the musty cutting boards.

    I could come home, take a shower, put on deodorant and my wife will say I still smell like onions and garlic lol. I think it’s in my pores now.

    Not really. I don’t mind it, its kinda nice sometimes to zone out and julienne your way through a sack of onions.

    I am a little concerned that they dont make me cry, anymore. Have I finally and fully died inside?

    honestly.. no. I love cutting onions. always get pumped to julienne at least 20 onions.

  12. Never. Prepping veggies is always a pleasure. Its knife work, and i take pride in doing it well and efficiently. One kitchen i worked at would julienne 50lbs twice a week for caramelized onions for burgers. You just have to go zen, and be in the moment. Pretend to be a onion chopping machine, and get into character.

    Also, you might want to slice those onions in the other direction, using the root structure to hold your slices together. The root structure is where the majority of the crying juice is, so the less you disturb it, the less you’ll cry
