Prickly Pear Granita

Prickly Pears have an unusual taste but they are well worth trying if you can track them down, although not widely available they are becoming more popular.

INGREDIENTS (serves 8 or more)
200g caster sugar
12 prickly pears
1 lemon (zest & juice)
2 limes (zest & juice)
8 wafer rolls (or biscuits of choice)
 
Heat the sugar with 250ml boiling water in a saucepan, simmer for 8 minutes then leave to cool. Peel the prickly pears and blend in a food processor. Add the zest and juice of the lemon and limes, the sugar syrup and a pinch of salt. Sieve into a container and freeze for at least 6 hours.
 
Run a fork over the surface to create ice crystals. Serve with wafer rolls or biscuits of your choice.
