It's been a minute since I bought steaks.

Seasoned with Kosmos Texas Beef and Meat Church Blanco.

Rested for 4 hours in the refrigerator then 1 hour in the freezer.

Got the PK360 to 225.

Cooling the meat allows them to take smoke without overcooking.

Slow cooked the steaks to 110.

Took them off the grill and rested for 20 mins.

Got the grill ripping hot and seared for 90 seconds each side.

Easy Steak Sunday.

    Hell of a lot of wood for two steaks, but maybe it was for the lemons you’re good.

    Nice cook. But that cow must have worked out on the regular. I’m used to seeing way more marbling in choice. Of course that has nothing to do with your cooking. You did a good job with what you had.
