
Just got into smoking this year. Started with a Traeger and scooped a sick deal on an XL BGE last week.
Didn’t want to ruin the turkey as the egg is new to me and still kinda figuring it out. Did a trial on a yard bird and it turned out fantastic!
About a 6lb chicken, spatchcocked and seasoned with Kosmos Q Dirty Bird, duck fat as a binder.
Indirect on the egg at 350-375 for about an hour and 15 when the breast temped at 165, thighs at 180.
It was tasty and juicy and perfect. Family loved it! Feel better about Thursday.
