The scents of hummus and freshly-baked pita will once again fill the Galleria in Downtown Fresno with the announcement of a second location for a Lebanese restaurant that made its debut in 2024.
Signage for Zaatar Euro Bistro appeared in the Galleria near the Fresno Convention Center last week. The location, formerly home to George’s Shish Kebab, has been vacant since the longtime staple closed its doors in August.
Zaatar Euro Bistro will take a more eastern spin, with brothers Badih “Buddy” Roy and Rabih “Robby” Nassar taking influence from their home in Lebanon, featuring Mediterranean omelets, baked goods, burgers and more.
Buddy said the restaurant offers a much wider selection of Mediterranean options not offered at many similar restaurants.
“Whenever you say ‘Mediterranean,’ everywhere in America, your mind always goes to beef kebab, chicken kebab, shawarma, rice pilaf…that’s the traditional Mediterranean restaurant in Fresno,” he said. “But when you go to Lebanon…it’s just a small part of it.”
Zaatar Bistro, located at the corner of Champlain and Shepherd avenues in north Fresno, has over 80 unique items on the menu, ranging from traditional chicken wraps, hummus and salads, to more unique items, including burgers, fatteh and baked desserts.
The trio hopes to have the restaurant open by the end of the year. Zaatar will operate during lunch hours, from 10 a.m. to 3 p.m. Monday through Friday.
