Only on these two bone pieces and appears to be on the surface. I just bought these from the meat counter. Is it safe to consume?

From my experience this is what happens when using a dull saw blade

Bone dust/food safe grease from the bandsaw, wipe it off, it will be fine.

Bandsaw grease. They’ve changed it just recently. They’ve used the bone to clean it off.

Why don’t they just use beef grease

When you put a new blade on theres black residue that most people wipe off but even after giving it a good wipe your first few cuts will get like that.

Someone cut black steak paper in the meat room with the band saw. The ink from paper/ dust was rubbed onto the bones staining the marrow. I know this because dumb fucks in my stores meat room do just that

I questioned the same thing to a meat supplier and it is from the saw blades. Nothing to worry about! I thought it was mold.
