On a recent food tour with @cookingwithalia and @visit_morocco_ I cooked my way through the classics from comforting tagines to delicate Bstilla from Tangiers to Marrakech!
My ultimate dish was Lhem bel Barkouk which is Lamb with Prunes reserved for esteemed events like weddings it is decadent, rich and packed with flavour!

Gordon Ramsay announced that Moroccan cuisine is the best in the world. Here’s my top six list of what you need to try. First up is Basara made from fava beans. Top it with cumin, cayenne, and olive oil. It’s earthy and hearty and eaten for breakfast, lunch, and dinner. Second is Tagra, a northern fish stew often made with sardines. It’s vibrant and flavorful, mopped up with Moroccan crusty bread. As a bonus, get yourself some Moroccan mint tea, which you can find in every street corner of Morocco. Third is pigeon bastila, the perfect balance of sweet and savory flavors. Flaky, buttery, and decadent. You have to try this one. Lemarb Slowcooked tender beef and sweet prunes. Often enjoyed during special occasions and celebrations. This was hands down one of my most favorite meals. Fifth on my list is tangia. Particularly popular in Marrakesh. It’s often buried in hot embers for hours, allowing the meat to become really tender with olives and preserved lemons. This is rich and savory. And finally, the tine. The cooking pot that so many of us associate with Morocco and its cuisine. The tjine allows steam to circulate, keeping ingredients moist and tender.
