Ingredients:
For the Bolognese sauce:
• 2 tablespoons olive oil
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 1 large carrot, finely diced
• 1 celery stalk, finely diced
• 400g ground beef (or a mix of beef and pork)
• 1/2 cup red wine (optional)
• 400g can of diced tomatoes
• 2 tablespoons tomato paste
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• Salt and pepper to taste
• 1 cup milk or heavy cream
• 1/2 cup grated Parmesan cheese
For the risotto:
• 2 tablespoons butter
• 1 small onion, finely chopped
• 1 1/2 cups Arborio rice
• 1/2 cup white wine (optional)
• 4–5 cups chicken or vegetable broth (warmed)
• 1/2 cup grated Parmesan cheese
• Fresh parsley for garnish
Instructions:
1. Prepare the Bolognese sauce:
• Heat olive oil in a large pan over medium heat. Add the onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
• Add the ground beef and cook until browned. Break it up into small pieces with a wooden spoon.
• Pour in the red wine (if using) and let it simmer for 2 minutes until reduced.
• Stir in the diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Let the sauce simmer gently on low heat for 20–30 minutes.
• Stir in the milk or heavy cream, and Parmesan cheese. Let it simmer for another 5 minutes, then set aside.
2. Prepare the risotto:
• In a separate pan, melt the butter and sauté the chopped onion until translucent.
• Add the Arborio rice and stir to coat the grains in the butter. Cook for 1–2 minutes until the rice is lightly toasted.
• Pour in the white wine (if using) and let it absorb into the rice.
• Begin adding the warm broth one ladle at a time, stirring continuously. Allow the liquid to absorb before adding more. Continue this process for about 18–20 minutes, until the rice is creamy and al dente.
3. Combine and serve:
• Stir the prepared Bolognese sauce into the risotto, mixing well to combine.
• Add the grated Parmesan cheese and adjust the seasoning with salt and pepper if needed.
• Garnish with fresh parsley and extra Parmesan if desired.
