id like to recreate the classic dark, thick hot ramen sauce but i need some help. does it have a specific name? all i found was people eating hot ramen… but i like the classic version as it actually tastes pretty good instead of just 'kick in the balls hotness'.

    Start with a metric shit ton of sodium. Add a drop of soy sauce. Add a drop of hot sauce. That should do it.

    So when i looked into it i read that the main base is something called Yangnyeom sauce which is a sweet and spicy sauce made predominantly with gochujang.

    The bottled version lists the ingredients as:

    >water, artificial chicken flavor powder, corn syrup, soy sauce, soybean oil, onion, garlic, chili extract, paprika extract, green tea flavor oil.

    So you could play around with ratios of water, chicken bouillon, sugar, soy sauce, oil (could probably just substitute vegetable or canola), onion, garlic (for those I’d grind up some freeze-dried, rather than use powders), capsaicin extract, and paprika extract. I wouldn’t know where to get green tea oil, but I doubt it’s very important.

    Be careful with the capsaicin extract, start with a single drop then add more if you need to.

    Buldak sells bottles of this stuff, I’ve seen quite a few versions of it at my local Asian grocery store!

    You can buy it straight from the bottle. If you want to make your own version, look up Buldak, the dish. The flavor profile of the Buldak noodles is based on that dish. Make the sauce/marinade, or whatever, and add some chicken bouillon and it is probably pretty close.

    its an industrial production branded hotsauce. you arent gonna recreate it. they spent likely hundreds of thousands on this.

    I love super spicy food but find this sauce gross, not because of the spice level but the fact it tastes to me like pure chemicals. Just a very offputting artificial flavour and weird aftertaste.
