You don’t use parchment paper or foil? This looks absolutely fuego IMO because I love a good meatlord, but you don’t need to cook it directly on the baking sheet to get this result.
Honestly I doubt cooking it directly on the pan is hurting anything though, aside from making the sheet harder to clean
